Savory Pork & Apple Skillet

Embrace the cozy flavors of fall any time of year with this utterly delicious Savory Pork & Apple Skillet! It features tender pork sautéed with sweet apples and caramelized onions, all swimming in a rich, subtly tangy sauce. It's truly a harmonious blend of flavors that your family will adore.

Ingredients

Yield: 4 servings

Main

  • 1 lb boneless pork loin or tenderloin, cut into 1-inch cubes
  • 1 tbsp olive oil
  • 1 large onion, thinly sliced
  • 2 apples (like Honeycrisp or Gala), cored and cut into 1/2-inch slices
  • 1/2 cup chicken or apple cider
  • 1 tbsp apple cider vinegar
  • 1 tbsp Dijon mustard
  • 1 sprig fresh rosemary, chopped (or 1 tsp dried)
  • Salt and black pepper to taste
  • Fresh parsley or thyme, chopped, for garnish

Preparation

  1. Step 1

Pat pork cubes dry with paper towels and season generously with salt and pepper.

  2. Step 2

Heat olive oil in a large skillet or Dutch oven over medium-high heat. Add pork and sear until browned on all sides, about 5-7 minutes. Remove pork from skillet and set aside.

  3. Step 3

Reduce heat to medium. Add sliced onion to the skillet and cook, stirring occasionally, until softened and lightly caramelized, about 8-10 minutes.

  4. Step 4

Stir in apple slices and chopped rosemary. Cook for another 3-5 minutes, until apples begin to soften.

  5. Step 5

Pour in chicken/apple cider and apple cider vinegar, scraping up any browned bits from the bottom of the pan. Stir in Dijon mustard. Bring to a simmer.

  6. Step 6

Return the seared pork to the skillet. Reduce heat to low, cover, and simmer for 5-7 minutes, or until pork is cooked through and tender. Cook uncovered for the last few minutes if you want the sauce to thicken slightly.

  7. Step 7

Taste and adjust seasoning with salt and pepper. Garnish with fresh parsley or thyme before serving. Excellent with rice, quinoa, or mashed potatoes.

Tips

  • Use pork tenderloin for a leaner option, or pork shoulder for even more flavor and tenderness (though it might require longer cooking).
  • For extra indulgence, a splash of heavy cream at the end can make the sauce even more luxurious.
  • If you don't have fresh rosemary, dried works perfectly; just use half the amount.
