- 1 lb boneless pork loin or tenderloin, cut into 1-inch cubes
- 1 tbsp olive oil
- 1 large onion, thinly sliced
- 2 apples (like Honeycrisp or Gala), cored and cut into 1/2-inch slices
- 1/2 cup chicken or apple cider
- 1 tbsp apple cider vinegar
- 1 tbsp Dijon mustard
- 1 sprig fresh rosemary, chopped (or 1 tsp dried)
- Salt and black pepper to taste
- Fresh parsley or thyme, chopped, for garnish
Preparation
Step 1
Pat pork cubes dry with paper towels and season generously with salt and pepper.
Step 2
Heat olive oil in a large skillet or Dutch oven over medium-high heat. Add pork and sear until browned on all sides, about 5-7 minutes. Remove pork from skillet and set aside.
Step 3
Reduce heat to medium. Add sliced onion to the skillet and cook, stirring occasionally, until softened and lightly caramelized, about 8-10 minutes.

Stir in apple slices and chopped rosemary. Cook for another 3-5 minutes, until apples begin to soften.

Pour in chicken/apple cider and apple cider vinegar, scraping up any browned bits from the bottom of the pan. Stir in Dijon mustard. Bring to a simmer.
Step 6
Return the seared pork to the skillet. Reduce heat to low, cover, and simmer for 5-7 minutes, or until pork is cooked through and tender. Cook uncovered for the last few minutes if you want the sauce to thicken slightly.
Step 7
Taste and adjust seasoning with salt and pepper. Garnish with fresh parsley or thyme before serving. Excellent with rice, quinoa, or mashed potatoes.
