Ingredients
Yield: 4 servings
Main
- 1 tbsp olive oil
- 1 lb ground pork
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 1 inch fresh ginger, grated (optional)
- 1/4 cup soy sauce (or tamari for gluten-free)
- 2 tbsp rice vinegar
- 1 tbsp brown sugar
- 1 tbsp sriracha or other chili garlic sauce (optional, to taste)
- 1 tbsp sesame oil
For Serving
- 4 cups cooked white or brown rice
- 2 green onions, thinly sliced
- 1/2 cup shredded carrots
- 1/2 cup chopped cucumber
- Sesame seeds, for garnish (optional)
Preparation
Step 1
Heat olive oil in a large skillet or wok over medium-high heat. Add ground pork and cook, breaking it up with a spoon, until browned and cooked through, about 7-9 minutes. Drain any excess fat.
Step 2
Add chopped onion to the skillet and cook until softened, about 3-5 minutes. Stir in minced garlic and grated ginger (if using) and cook for 1 minute until fragrant.
Step 3
In a small bowl, whisk together soy sauce, rice vinegar, brown sugar, and sriracha (if using). Pour the sauce over the pork mixture in the skillet. Bring to a simmer and cook for 2-3 minutes, stirring occasionally, until the sauce thickens slightly and coats the pork.
Step 4
Remove from heat and stir in the sesame oil.
Step 5
Assemble bowls: Divide cooked rice among four bowls. Top generously with the savory pork mixture. Garnish with sliced green onions, shredded carrots, chopped cucumber, and a sprinkle of sesame seeds, if desired.
Step 6
Serve immediately and enjoy!
Tips
- Any ground meat (chicken, turkey, or beef) can be used instead of pork.
- Add a fried egg on top for extra richness and protein!
- Prep your veggies and sauce while the pork is browning to make this dish even quicker.
