  • 1 lb pork tenderloin, cut into 1-inch thick medallions
  • 1 yellow onion, thinly sliced
  • 2 medium apples (such as Gala or Honeycrisp), cored and sliced 1/2-inch thick
  • 1/2 cup chicken or apple cider
  • 1 tbsp Dijon mustard
  • 1 tbsp maple syrup or brown sugar
  • 1 tsp fresh thyme leaves (or 1/2 tsp dried)
  • Salt and freshly ground black pepper to taste
  • Fresh parsley, chopped, for garnish (optional)

Preparation

  1. Step 1

    Pat pork medallions dry and season generously with salt and pepper.

    Heat olive oil in a large oven-safe skillet (cast iron works great!) over medium-high heat. Add pork and sear for 2-3 minutes per side until golden brown. Remove pork from skillet and set aside.

    In a small bowl, whisk together the chicken broth (or cider), Dijon mustard, and maple syrup. Pour the mixture into the skillet. Bring to a simmer, scraping up any browned bits from the bottom of the pan.

    Return the seared pork medallions to the skillet, nestling them among the apples and onions. Reduce heat to low, cover, and simmer for 5-7 minutes, or until pork is cooked through and tender (145°F internal temperature).

    Taste and adjust seasoning if needed. Garnish with fresh parsley if desired. Serve warm.
