- 1 tbsp Dijon mustard
- 1 tbsp maple syrup or brown sugar
- 1 tsp fresh thyme leaves (or 1/2 tsp dried)
- Salt and freshly ground black pepper to taste

Pat pork medallions dry and season generously with salt and pepper.
