Ingredients

Yield: 4 servings

Main

  • 2 large heads broccoli (about 1.5 lbs total), cut into bite-sized florets
  • 1 tbsp olive oil

Miso Glaze

  • 2 tbsp white miso paste
  • 1 tbsp soy sauce (or tamari for gluten-free)
  • 1 tbsp rice vinegar
  • 1 tbsp maple syrup or honey
  • 1 tsp sesame oil
  • 1 clove garlic, minced (optional)
  • 1/2 tsp grated fresh ginger (optional)

Garnish (optional)

  • Sesame seeds
  • Red pepper flakes

Preparation

  1. Step 1

Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper.

  2. Step 2

In a medium bowl, whisk together all the miso glaze ingredients: white miso paste, soy sauce, rice vinegar, maple syrup (or honey), sesame oil, minced garlic, and grated ginger (if using) until smooth and well combined.

  3. Step 3

Place the broccoli florets on the prepared baking sheet. Drizzle with 1 tablespoon of olive oil and toss to coat evenly. Then, pour about two-thirds of the miso glaze over the broccoli and toss again, making sure every floret is well coated. Reserve the remaining glaze.

  4. Step 4

Spread the glazed broccoli in a single layer on the baking sheet. Roast for 15-20 minutes, stirring halfway through, until the broccoli is tender-crisp and the edges are slightly caramelized. Keep an eye on it to prevent burning.

  5. Step 5

Remove from the oven. Drizzle with the remaining reserved miso glaze and toss once more. Garnish with sesame seeds and red pepper flakes if desired.

  6. Step 6

Serve immediately as a delicious side dish to your favorite protein or grain. Enjoy the incredible flavor!

Tips

  • Ensure your baking sheet isn't overcrowded; this allows the broccoli to roast and caramelize rather than steam. Use two sheets if necessary.
  • White miso paste is generally milder and sweeter than red miso. For this recipe, white miso (shiro miso) is recommended for its balanced flavor.
  • If you don't have fresh ginger, a pinch of ground ginger can work in a pinch, but fresh provides a brighter flavor.
