A whole roast chicken might sound fancy, but it's one of the simplest, most satisfying meals you can make at home! This Savory Garlic Herb Roast Chicken delivers incredibly juicy meat and gorgeously crispy, flavorful skin with very little effort. It's a timeless classic that will make your kitchen smell amazing and feed a crowd (or give you delicious leftovers!).

  • 1 (3-4 lb) whole roasting chicken
  • 2 tbsp olive oil
  • 6 cloves garlic, minced
  • 1 tbsp fresh rosemary, chopped (or 1 tsp dried)
  • 1 tbsp fresh thyme, chopped (or 1 tsp dried)
  • 1 tsp smoked paprika
  • 1 tsp onion powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 lemon, halved
  • 1 small yellow onion, quartered

Preparation

  1. Step 1

    Preheat oven to 400°F (200°C). Remove chicken from packaging, remove giblets from cavity, and pat dry very thoroughly with paper towels (this is key for crispy skin!).

    In a small bowl, combine olive oil, minced garlic, chopped rosemary, chopped thyme, smoked paprika, onion powder, salt, and black pepper to form an herb paste.

  3. Step 3

    Place chicken in a roasting pan or on a baking sheet. Loosen the skin over the breast meat gently with your fingers, being careful not to tear it. Rub about half of the herb paste directly onto the breast meat under the skin. Rub the remaining paste all over the outside of the chicken, ensuring it's evenly coated.

    Stuff the cavity of the chicken with the halved lemon and quartered yellow onion. Tie the legs together with kitchen twine if desired, and tuck the wing tips under the chicken to prevent burning.

    Roast for 60-75 minutes, or until a meat thermometer inserted into the thickest part of the thigh (without touching bone) registers 165°F (74°C). If the skin starts to brown too quickly, you can loosely tent it with foil.

  6. Step 6

    Once cooked, remove the chicken from the oven and transfer it to a cutting board. Tent loosely with foil and let it rest for at least 10-15 minutes before carving. This allows the juices to redistribute, ensuring a more tender and flavorful chicken. Carve and serve immediately.

  • Don't skip the resting step! It makes a huge difference in the juiciness of your chicken.
