Ingredients

Yield: 4 servings

Main

  • 1 tbsp olive oil
  • 1 lb boneless, skinless chicken breasts or thighs, cut into ½-inch cubes
  • 1 large sweet potato, peeled and diced into ½-inch cubes
  • 1 yellow onion, chopped
  • 1 bell pepper (any color), diced
  • 2 cloves garlic, minced
  • 1 tsp smoked paprika
  • ½ tsp dried thyme
  • Salt and freshly ground black pepper to taste
  • Fresh parsley, chopped, for garnish (optional)

Preparation

  1. Step 1

Heat olive oil in a large skillet over medium-high heat. Add the cubed chicken and cook until browned on all sides, about 5-7 minutes. Remove chicken from the skillet and set aside.

  2. Step 2

Add the diced sweet potato and chopped onion to the same skillet. Cook, stirring occasionally, for 8-10 minutes, or until the sweet potato starts to soften and brown slightly.

  3. Step 3

Stir in the diced bell pepper and minced garlic. Cook for another 3-5 minutes, until the bell pepper is tender-crisp and the garlic is fragrant.

  4. Step 4

Return the cooked chicken to the skillet. Stir in the smoked paprika, dried thyme, salt, and pepper. Toss everything together to combine.

  5. Step 5

Continue to cook for 2-3 minutes, allowing the flavors to meld and the chicken to heat through. If desired, garnish with fresh chopped parsley before serving.

Tips

  • For an extra kick, add a pinch of cayenne pepper or a dash of hot sauce.
  • Top with a fried or poached egg for a delicious breakfast-for-dinner option.
  • Prep your ingredients ahead of time by dicing the chicken and vegetables to make this even speedier on a busy weeknight.
