- 1/2 cup shredded sharp cheddar cheese
- 1/2 cup breadcrumbs (panko or regular)
- 1 large egg, lightly beaten
- 2 green onions, thinly sliced
- 1 clove garlic, minced
- 1/2 tsp dried dill (optional, but recommended!)
- 1/4 tsp salt
- Pinch of black pepper
- 2-3 tbsp olive oil, for frying

Step 1
Steam or boil the broccoli florets until tender-crisp, about 3-5 minutes. Drain very well and let cool slightly. Chop the cooked broccoli finely (you can also use a food processor for a few pulses).

In a large bowl, combine the chopped broccoli, shredded cheddar cheese, breadcrumbs, egg, sliced green onions, minced garlic, dried dill (if using), salt, and pepper. Mix everything thoroughly until well combined.

Form the mixture into 8-10 equal-sized patties, about 1/2 inch thick. If the mixture feels too wet, add a tiny bit more breadcrumbs.

Heat 2-3 tablespoons of olive oil in a large non-stick skillet over medium heat. Once hot, carefully place the patties in the skillet, ensuring not to overcrowd (cook in batches if necessary).

Cook for 4-6 minutes per side, or until deeply golden brown and heated through. Remove from the skillet and place on a paper-towel-lined plate to absorb any excess oil.
