Ingredients

Yield: 4 servings

Main

  • 2 large heads broccoli, cut into florets
  • 2 tbsp olive oil
  • ¼ cup slivered almonds
  • 2 oz feta cheese, crumbled
  • 1 lemon, zested and juiced
  • Salt and freshly ground black pepper to taste

Preparation

  1. Step 1

Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper.

  2. Step 2

Spread the broccoli florets evenly on the baking sheet. Drizzle with olive oil, season with salt and pepper, and toss to coat thoroughly.

  3. Step 3

Roast for 10 minutes. Then, remove the baking sheet from the oven, add the slivered almonds, and toss again with the broccoli.

  4. Step 4

Return to the oven and roast for another 5-7 minutes, or until the broccoli is tender-crisp and slightly charred, and the almonds are lightly toasted. Keep an eye on the almonds as they can burn quickly.

  5. Step 5

Transfer the roasted broccoli and almonds to a serving dish. Sprinkle with crumbled feta cheese, fresh lemon zest, and a squeeze of fresh lemon juice. Serve warm.

Tips

  • For extra crispy broccoli, ensure your florets are dry before tossing with oil.
  • Red pepper flakes can be added for a touch of heat if you like.
  • If you don't have slivered almonds, chopped pecans or walnuts would also be delicious.
