- 2 tablespoons unsalted butter
- 1 lb large shrimp, peeled and deveined, tails on or off
- 4 cloves garlic, minced
- 1/4 cup dry white wine or chicken broth
- 1/2 teaspoon red pepper flakes (optional, for heat)
- 5 oz fresh spinach
- 2 tablespoons fresh lemon juice
- 2 tablespoons fresh parsley, chopped
- Salt and black pepper to taste

Step 1
Pat the shrimp dry with paper towels and season with salt and pepper.

Heat olive oil and butter in a large skillet over medium-high heat. Once butter is melted and shimmering, add the shrimp in a single layer. Cook for 1-2 minutes per side until pink and opaque. Don't overcrowd the pan; cook in batches if necessary.

Remove shrimp from the skillet and set aside. Add the minced garlic and red pepper flakes (if using) to the same skillet and cook for 30 seconds until fragrant, being careful not to burn the garlic.

Pour in the white wine or chicken broth, scraping up any browned bits from the bottom of the pan. Bring to a simmer and cook for 1-2 minutes until slightly reduced.

Add the fresh spinach to the skillet and cook, tossing constantly, until just wilted, about 1-2 minutes.

Return the cooked shrimp to the skillet. Stir in the fresh lemon juice and chopped parsley. Toss everything together until well combined and heated through. Taste and adjust seasoning if needed.
