- 1 tbsp olive oil
- 2 tbsp unsalted butter
- 1 lb large shrimp, peeled and deveined, tails on or off
- 4 cloves garlic, minced
- 1/4 tsp red pepper flakes (optional)
- 1/4 cup dry white wine or chicken broth
- 1 tbsp lemon juice
- 2 tbsp fresh parsley, chopped
- Salt and black pepper to taste
Preparation
Step 1
Pat shrimp dry with paper towels; season with salt and pepper.
Step 2
Heat olive oil and 1 tablespoon of butter in a large skillet over medium-high heat until butter is melted and shimmering.
Step 3
Add shrimp to the skillet in a single layer. Cook for 1-2 minutes per side, until pink and just cooked through. Avoid overcooking. Remove shrimp from skillet and set aside.
Step 4
Add remaining 1 tablespoon of butter, minced garlic, and red pepper flakes (if using) to the skillet. Cook for 30-60 seconds, stirring consistently, until fragrant. Do not burn the garlic.
Step 5
Pour in white wine (or chicken broth) and lemon juice. Bring to a simmer and cook for 1-2 minutes, scraping up any browned bits from the bottom of the pan, until the sauce slightly reduces.
Step 6
Return cooked shrimp to the skillet and toss to coat in the sauce. Stir in fresh parsley. Taste and adjust seasoning if needed. Serve immediately.
