Chili-Lime Shrimp

  • Juice of 1 lime (about 2 tbsp)

  • 2 cups cooked rice (white or brown)
  • 1 ripe avocado, sliced or diced
  • 1/2 cup corn (canned, frozen, or fresh)
  • 1/2 cup black beans, rinsed and drained
  • 1/4 cup chopped fresh cilantro
  • Lime wedges for serving

Preparation

    In a medium bowl, combine shrimp, olive oil, chili powder, cumin, garlic powder, red pepper flakes (if using), lime juice, salt, and pepper. Toss well to coat the shrimp evenly. Let marinate for 5-10 minutes (or while you prep other ingredients).
