Quick Chili Garlic Shrimp Stir-Fry

When hunger strikes and time is short, this Quick Chili Garlic Shrimp Stir-Fry is your superhero. It’s incredibly fast to prepare, bursting with vibrant flavors, and loaded with tender shrimp and crisp vegetables. Serve it over rice or noodles for a complete, satisfying meal!

For the Sauce

  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp chili garlic sauce (or sriracha for less heat)
  • 1 tsp sesame oil
  • 1 tsp cornstarch
  • 1/4 cup water or chicken broth

For the Stir-Fry

  • 1 tbsp vegetable oil
  • 1 lb large shrimp, peeled and deveined
  • 3 cloves garlic, minced
  • 1 inch fresh ginger, grated (about 1 tsp)
  • 1 head broccoli, cut into small florets
  • 1 red bell pepper, thinly sliced
  • Cooked rice or noodles, for serving

Preparation

  1. Step 1

    In a small bowl, whisk together all sauce ingredients (soy sauce, rice vinegar, chili garlic sauce, sesame oil, cornstarch, and water/broth) until smooth. Set aside.

  2. Step 2

    Heat vegetable oil in a large skillet or wok over medium-high heat. Add shrimp and cook for 1-2 minutes per side, until pink and just cooked through. Remove shrimp from the skillet and set aside.

  3. Step 3

    Add minced garlic, grated ginger, broccoli florets, and sliced red bell pepper to the same skillet. Stir-fry for 3-5 minutes, until vegetables are tender-crisp.

  4. Step 4

    Give the prepared sauce a quick whisk again, then pour it into the skillet with the vegetables. Cook, stirring constantly, until the sauce thickens and coats the vegetables, about 1-2 minutes.

  5. Step 5

    Return the cooked shrimp to the skillet and toss to coat everything in the sauce. Cook for just 30 seconds to heat through.

  6. Step 6

    Serve immediately over cooked rice or noodles. Garnish with sesame seeds or sliced green onions if desired.

Tips

  • Prep all your ingredients (chop veggies, make sauce) before you start cooking, as stir-fries cook very quickly.
  • Don't overcrowd the pan; cook in batches if necessary to ensure even cooking and browning.
  • Feel free to swap out vegetables based on what you have: snap peas, carrots, or mushrooms would also be great.
