  • 1 (15 oz) can black beans, rinsed and drained
  • 1 (15 oz) can sweet corn, drained (or 1.5 cups frozen corn, thawed)
  • 1 red bell pepper, diced
  • ½ red onion, finely diced
  • 1 ripe avocado, diced
  • ¼ cup fresh cilantro, chopped

For the Dressing

  • 3 tbsp olive oil
  • 2 tbsp lime juice (from 1-2 limes)
  • 1 clove garlic, minced
  • ½ tsp ground cumin
  • ¼ tsp chili powder
  • Salt and freshly ground black pepper to taste

Preparation

  1. Step 1

    In a small bowl, whisk together all dressing ingredients: olive oil, lime juice, minced garlic, ground cumin, chili powder, salt, and pepper. Set aside.

    In a large bowl, combine the rinsed black beans, drained corn, diced red bell pepper, finely diced red onion, and chopped fresh cilantro.
