Ingredients

Yield: 4 servings

Main

  • 1.5 lbs pork tenderloin (1 large or 2 small)
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper

For the Maple Dijon Glaze

  • 2 tbsp maple syrup
  • 2 tbsp Dijon mustard
  • 1 tbsp apple cider vinegar
  • 1 clove garlic, minced

Optional Sides

  • Roasted potatoes or sweet potatoes
  • Steamed green beans or asparagus

Preparation

  1. Step 1

    Preheat oven to 400°F (200°C).

  2. Step 2

Pat the pork tenderloin dry with paper towels. Rub with olive oil, then season generously with salt and pepper.

  3. Step 3

In a small bowl, whisk together maple syrup, Dijon mustard, apple cider vinegar, and minced garlic to create the glaze.

  4. Step 4

Place the pork tenderloin in a small roasting pan or oven-safe dish. Brush about half of the maple Dijon glaze over the pork.

  5. Step 5

Roast for 15 minutes. Remove from oven, brush with the remaining glaze, and return to the oven for another 10-15 minutes, or until an instant-read thermometer inserted into the thickest part of the pork registers 145°F (63°C).

  6. Step 6

Remove the tenderloin from the oven, tent loosely with foil, and let rest for 5-10 minutes before slicing. This helps keep it juicy!

  7. Step 7

Slice and serve immediately with your favorite sides.

Tips

  • Don't skip the resting step – it's crucial for juicy pork!
  • If you like a thicker glaze, simmer any pan drippings with a touch of cornstarch slurry (1 tsp cornstarch + 1 tbsp cold water) for a minute.
  • Add some chopped root vegetables like carrots or potatoes to the roasting pan with the pork for an easy one-pan meal.
