Oven-Roasted Maple Dijon Chicken Thighs

Say hello to your new favorite weeknight chicken! These Oven-Roasted Maple Dijon Chicken Thighs are incredibly simple to prepare, yet burst with a harmonious blend of sweet and savory flavors. The skin gets wonderfully caramelized and crispy, while the meat stays juicy and tender. It’s a magic trick that happens mostly in your oven!

Ingredients

Yield: 4 servings

Main

  • 8 bone-in, skin-on chicken thighs (about 2.5-3 lbs)
  • 1/4 cup maple syrup
  • 2 tbsp Dijon mustard
  • 1 tbsp apple cider vinegar
  • 2 cloves garlic, minced
  • 1/2 tsp dried thyme
  • Salt and black pepper to taste
  • Fresh parsley, chopped, for garnish (optional)

Preparation

  1. Step 1

Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper or foil for easy cleanup.

  2. Step 2

Pat chicken thighs very dry with paper towels. Season generously all over with salt and black pepper. Arrange chicken thighs skin-side up on the prepared baking sheet.

  3. Step 3

In a small bowl, whisk together maple syrup, Dijon mustard, apple cider vinegar, minced garlic, and dried thyme until well combined.

  4. Step 4

Brush about half of the maple-Dijon glaze over the chicken thighs, ensuring the skin is well coated.

  5. Step 5

Roast for 20 minutes. Remove from oven, brush with the remaining glaze, and return to the oven for another 10-15 minutes, or until the internal temperature reaches 165°F (74°C) and the skin is golden brown and crispy.

  6. Step 6

Let chicken rest for 5 minutes before serving. Garnish with fresh parsley, if desired.

Tips

  • To make it a full meal, roast some chopped root vegetables (like sweet potatoes or carrots) alongside the chicken, adding them to the pan when you baste the chicken the second time.
  • For extra crispy skin, lightly score the chicken skin before seasoning and roasting.
