- 1.5 lbs small potatoes (like creamer or Yukon Gold), quartered or halved
- 1.5 lbs salmon fillets (4-ounce portions)
- 3 tbsp olive oil, divided
- 4 cloves garlic, minced, divided
- 1 tbsp fresh rosemary, chopped, divided
- 1 tbsp fresh thyme, chopped, divided
- 1 tsp paprika
- Salt and black pepper to taste
- 1 lemon, half sliced, half for wedges

Step 1
Preheat oven to 400°F (200°C). Line a large rimmed baking sheet with parchment paper.
Step 2
In a large bowl, combine the quartered potatoes with 2 tbsp olive oil, 2 cloves minced garlic, 1/2 tbsp chopped rosemary, 1/2 tbsp chopped thyme, paprika, salt, and pepper. Toss well to coat.
Step 3
Spread the seasoned potatoes in a single layer on one side of the prepared baking sheet. Roast for 15 minutes.
Step 4
While potatoes roast, pat salmon fillets dry. In a small bowl, whisk together remaining 1 tbsp olive oil, 2 cloves minced garlic, 1/2 tbsp chopped rosemary, 1/2 tbsp chopped thyme, salt, and pepper. Rub this mixture over the salmon fillets.
Step 5
After 15 minutes, remove the baking sheet from the oven. Arrange the seasoned salmon fillets on the other side of the baking sheet, alongside the potatoes. Place lemon slices over each salmon fillet.
Step 6
Return to the oven and roast for another 10-15 minutes, or until the salmon is cooked through and flakes easily with a fork, and the potatoes are tender and golden brown.
Step 7
Serve immediately with fresh lemon wedges.
