  • 2 lbs bone-in, skin-on chicken pieces (thighs, drumsticks, or a mix)
  • 1 lb small red potatoes, halved or quartered
  • 1 lb carrots, peeled and chopped into 1-inch pieces
  • 2 parsnips, peeled and chopped into 1-inch pieces
  • 1 large red onion, cut into wedges
  • 3 tbsp olive oil
  • 1 tbsp fresh rosemary, chopped (or 1 tsp dried)
  • 1 tsp dried thyme
  • 1 tsp garlic powder
  • Salt and freshly ground black pepper to taste

Preparation

  1. Step 1

    Preheat oven to 400°F (200°C).

  2. Step 2

    In a large bowl, combine potatoes, carrots, parsnips, and red onion. Drizzle with 2 tablespoons of olive oil. Add half of the rosemary, thyme, garlic powder, salt, and pepper. Toss to coat vegetables evenly.

    Pat chicken pieces dry with paper towels. Rub with the remaining 1 tablespoon of olive oil. Season generously with the remaining rosemary, thyme, garlic powder, salt, and pepper.

    Spread the seasoned vegetables in a single layer on a large rimmed baking sheet. Place the seasoned chicken pieces on top of the vegetables.

    Roast for 40-45 minutes, or until chicken is cooked through (internal temperature reaches 165°F/74°C) and vegetables are tender and slightly caramelized. If chicken is browning too quickly, you can loosely tent it with foil.

  6. Step 6

    Remove from oven and let rest for a few minutes before serving. Enjoy directly from the sheet pan!
