  • 1 lb large shrimp, peeled and deveined
  • 2 bell peppers (any color), sliced
  • 1/2 red onion, thinly sliced
  • 2 tbsp olive oil
  • 2 tsp chili powder
  • 1 tsp ground cumin
  • 1/2 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/4 tsp cayenne pepper (optional, for heat)
  • Salt and black pepper to taste
  • Warm tortillas, for serving
  • Optional toppings: salsa, guacamole, sour cream, lime wedges, chopped cilantro

Preparation

  1. Step 1

    Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper.

    In a large bowl, combine the sliced bell peppers, red onion, and olive oil. Add the chili powder, cumin, smoked paprika, garlic powder, cayenne pepper (if using), salt, and black pepper. Toss well to coat the vegetables evenly.

    Spread the seasoned vegetables in a single layer on the prepared baking sheet. Roast for 10 minutes.

    While the vegetables are roasting, add the peeled and deveined shrimp to the same bowl (no need to clean it). Toss the shrimp with any remaining seasoning from the vegetables. If the bowl is too dry, add a tiny drizzle of olive oil.

    After 10 minutes, remove the baking sheet from the oven. Add the seasoned shrimp to the baking sheet, spreading it evenly among the vegetables. Return to the oven and roast for another 5-7 minutes, or until the shrimp are pink and cooked through.

    Serve the hot fajita mixture immediately with warm tortillas and your favorite toppings.

  • Don't overcrowd the baking sheet; use two if necessary to ensure everything roasts evenly and gets a nice char.
