Ingredients
Yield: 4 servings
Main
- 1 tbsp olive oil
- 1 lb Italian sausage (mild or hot), casings removed
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 (28 oz) can crushed tomatoes
- 1/2 cup chicken broth
- 1 tsp dried basil
- 1/2 tsp red pepper flakes (optional)
- Salt and black pepper to taste
- 1 (17.6 oz) package potato gnocchi (shelf-stable)
- 5 oz fresh spinach
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
Preparation
Step 1
Preheat oven to 400°F (200°C).
Step 2
Heat olive oil in a large oven-safe skillet or Dutch oven over medium-high heat. Add Italian sausage and cook, breaking it up with a spoon, until browned. Drain any excess fat.
Step 3
Add onion to the skillet and cook until softened, about 5 minutes. Stir in garlic and cook for 1 minute more until fragrant.
Step 4
Stir in crushed tomatoes, chicken broth, dried basil, and red pepper flakes (if using). Bring to a simmer, then reduce heat to low and cook for 5 minutes, allowing flavors to meld. Season with salt and pepper.
Step 5
Add the gnocchi and fresh spinach to the skillet, stirring gently until the spinach wilts and the gnocchi is coated in sauce.
Step 6
Sprinkle mozzarella and Parmesan cheese over the top. Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the cheese is melted and bubbly and the gnocchi is tender.
Step 7
Serve hot, straight from the skillet. Enjoy!
Tips
- For extra flavor, use sun-dried tomatoes (chopped) in the sauce.
- If you don't have an oven-safe skillet, transfer the mixture to a 9x13 inch baking dish before adding cheese and baking.
