Ingredients

Yield: 4 servings

Main

  • 1.5 lb pork tenderloin
  • 1 tbsp olive oil
  • Salt and freshly ground black pepper to taste

For the Glaze

  • 1/4 cup honey
  • 3 cloves garlic, minced
  • 2 tbsp soy sauce (or tamari for gluten-free)
  • 1 tbsp apple cider vinegar
  • 1 tsp dried ginger or 1/2 tsp fresh grated ginger
  • Optional garnish: chopped fresh parsley or sesame seeds

Preparation

  1. Step 1

Preheat oven to 400°F (200°C). Pat the pork tenderloin dry with paper towels. Season generously with salt and black pepper.

  2. Step 2

Heat olive oil in an oven-safe skillet (cast iron works great) over medium-high heat. Sear the pork tenderloin for 2-3 minutes per side, until nicely browned all over. This creates a delicious crust and locks in juices.

  3. Step 3

While the pork sears, whisk together all glaze ingredients (honey, minced garlic, soy sauce, apple cider vinegar, and ginger) in a small bowl.

  4. Step 4

Once seared, remove the skillet from heat. Pour about half of the honey garlic glaze over the pork tenderloin. Transfer the skillet to the preheated oven.

  5. Step 5

Roast for 15-20 minutes, or until an internal temperature of 145°F (63°C) is reached. Halfway through cooking, brush with the remaining glaze. Cooking time will vary depending on the thickness of your tenderloin.

  6. Step 6

Once cooked, remove from the oven, transfer the pork tenderloin to a cutting board, and tent loosely with foil. Let rest for 5-10 minutes before slicing. This allows the juices to redistribute, keeping the pork tender and juicy.

  7. Step 7

Slice the pork into thick medallions and serve, drizzling with any pan juices from the skillet. Garnish with fresh parsley or sesame seeds if desired.

Tips

  • The key to tender pork tenderloin is not to overcook it. Use an instant-read thermometer for best results.
  • Serve with roasted vegetables like green beans or asparagus, and a side of rice or quinoa to soak up that delicious glaze.
