Ingredients

Yield: 4 servings

Main

  • 1 lb cod fillets (fresh or thawed), about 1-inch thick
  • 4 cups broccoli florets (about 1 head)
  • 1 tbsp olive oil
  • Salt and black pepper to taste

Honey Garlic Sauce

  • 1/4 cup honey
  • 2 tbsp soy sauce (low sodium preferred)
  • 2 cloves garlic, minced
  • 1 tsp fresh ginger, grated (optional)
  • 1 tbsp fresh lemon juice

Preparation

  1. Step 1

Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.

  2. Step 2

In a small bowl, whisk together all honey garlic sauce ingredients: honey, soy sauce, minced garlic, grated ginger (if using), and lemon juice. Set aside.

  3. Step 3

Place broccoli florets on one half of the prepared baking sheet. Drizzle with olive oil and season with salt and pepper. Toss to coat.

  4. Step 4

Bake the broccoli for 10 minutes.

  5. Step 5

While broccoli bakes, pat cod fillets dry thoroughly with paper towels. Season lightly with salt and pepper.

  6. Step 6

After 10 minutes, remove baking sheet from the oven. Push the broccoli to one side. Place cod fillets on the other side of the baking sheet. Brush a generous amount of the honey garlic sauce over the cod and half of the sauce over the broccoli.

  7. Step 7

Return the baking sheet to the oven and bake for another 8-12 minutes, or until internal temperature of cod reaches 145°F (63°C) and it flakes easily with a fork, and broccoli is tender-crisp. Serve immediately with any remaining sauce drizzled over.

Tips

  • Patting the cod very dry helps it bake more evenly and absorb the sauce better.
  • Don't worry if the sauce looks thin; it concentrates and glazes beautifully as it bakes.
