Ingredients

Yield: 4 servings

For the Meatballs

  • 1 lb ground chicken
  • 1/4 cup breadcrumbs (panko or regular)
  • 1 large egg, lightly beaten
  • 2 cloves garlic, minced
  • 1 tbsp soy sauce
  • 1/2 tsp ground ginger
  • 1/4 tsp black pepper

For the Honey Garlic Sauce

  • 1/4 cup honey
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp sriracha (optional, for heat)
  • 2 cloves garlic, minced
  • 1 tsp sesame oil

For Garnish (Optional)

  • Sesame seeds
  • Sliced green onions

Preparation

  1. Step 1

Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.

  2. Step 2

In a large bowl, gently combine ground chicken, breadcrumbs, egg, 2 minced garlic cloves, 1 tbsp soy sauce, ground ginger, and black pepper. Do not overmix, or meatballs can become tough.

  3. Step 3

Roll the mixture into 1-inch meatballs and place them on the prepared baking sheet, leaving a little space between each.

  4. Step 4

Bake for 15-18 minutes, or until cooked through (internal temperature 165°F/74°C) and lightly browned.

  5. Step 5

While meatballs bake, prepare the sauce: In a small saucepan, whisk together honey, 2 tbsp soy sauce, rice vinegar, sriracha (if using), 2 minced garlic cloves, and sesame oil. Bring to a simmer over medium heat and cook for 2-3 minutes, stirring, until slightly thickened.

  6. Step 6

Once meatballs are cooked, remove them from the oven. You can either toss the meatballs directly in the saucepan with the sauce or transfer them to a serving dish and pour the sauce over. Toss to coat evenly.

  7. Step 7

Garnish with sesame seeds and sliced green onions if desired, and serve warm with rice or noodles.

Tips

  • Using a cookie scoop can help make uniformly sized meatballs, ensuring even cooking.
  • If you want extra sticky sauce, you can return the sauced meatballs to the oven for another 5 minutes after coating.
  • Don't worry if the meatballs look a little pale; the sauce will add color and shine!
