For the Fish

  • 2 (6 oz) white fish fillets (cod, tilapia, snapper, or halibut)
  • 1 tbsp olive oil
  • ½ tsp garlic powder
  • Salt and freshly ground black pepper to taste
  • 2 lemon wedges, for serving

For the Zesty Tomato Salsa

  • 1 cup cherry tomatoes, quartered
  • ¼ red onion, finely diced
  • ¼ cup fresh cilantro, chopped
  • 1 tbsp olive oil
  • 1 tbsp fresh lime juice
  • ½ jalapeño, seeded and minced (optional, for heat)
  • Salt and black pepper to taste

Preparation

  1. Step 1

    Preheat oven to 400°F (200°C). Line a small baking sheet with parchment paper or foil.

    Pat fish fillets dry with paper towels. Place them on the prepared baking sheet. Drizzle with 1 tbsp olive oil, then season generously with garlic powder, salt, and pepper.

    Bake for 12-15 minutes, or until the fish is opaque and flakes easily with a fork. Cooking time will vary depending on the thickness of your fillets.

    While the fish bakes, prepare the salsa: In a medium bowl, combine the quartered cherry tomatoes, finely diced red onion, chopped cilantro, 1 tbsp olive oil, fresh lime juice, and minced jalapeño (if using). Stir gently to combine.

    Season the salsa with salt and black pepper to taste, adjusting the lime juice if desired for more zest.

  6. Step 6

    Once the fish is cooked, remove it from the oven. Carefully transfer each fillet to a plate. Spoon a generous amount of the fresh tomato salsa over each piece of fish. Serve immediately with lemon wedges.

Tips

  • For a complete meal, roast some asparagus or green beans alongside the fish on the same sheet pan.
  • If you don't have fresh cilantro, fresh parsley or basil would also be delicious in the salsa.
  • Any mild, flaky white fish will work beautifully here, just adjust cooking times for thickness.
