- 1 lb firm white fish fillets (cod, haddock, tilapia), about 4 pieces
- 1 lb mixed root vegetables (carrots, parsnips, sweet potatoes), peeled and cut into 1/2-inch pieces
- 1 red onion, cut into wedges
- 2 tbsp olive oil
- 1 tsp dried thyme
- 1/2 tsp garlic powder
- Salt and freshly ground black pepper to taste
- 1 lemon, half sliced, half for wedges for serving
- Fresh parsley, chopped, for garnish (optional)
Preparation
Step 1
Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper.
Step 2
In a large bowl, combine the chopped root vegetables and red onion. Drizzle with 1 tablespoon of olive oil, dried thyme, garlic powder, salt, and pepper. Toss well to coat.
Step 3
Spread the seasoned vegetables in a single layer on one half of the prepared baking sheet. Roast for 15 minutes.
Step 4
While the vegetables roast, pat the fish fillets dry with paper towels. Drizzle the fish with the remaining 1 tablespoon of olive oil, and season lightly with salt and pepper. Place 1-2 lemon slices on each fillet.
Step 5
After 15 minutes, remove the baking sheet from the oven. Arrange the seasoned fish fillets on the other half of the baking sheet. Return to the oven and bake for another 10-15 minutes, or until the fish is opaque and flakes easily with a fork, and the vegetables are tender and slightly caramelized.
Step 6
Serve immediately with fresh lemon wedges and a sprinkle of chopped parsley, if desired.
Tips
- For a bit of heat, add a pinch of red pepper flakes to the vegetables before roasting.
- Ensure your fish fillets are similar in thickness for even cooking. If some are much thinner, add them later.
