Ingredients
Yield: 4 servings
Main
- 1.5 lbs small potatoes (such as creamer or Yukon Gold), quartered
- 1 tbsp olive oil
- 1 tsp dried oregano
- 1/2 tsp garlic powder
- Juice of 1/2 lemon
- Salt and black pepper to taste
- 4 (6 oz) white fish fillets (such as cod, halibut, or tilapia)
- 2 tbsp unsalted butter, melted
- 1 tbsp fresh parsley, chopped (for garnish)
- Lemon wedges (for serving)
Preparation
Step 1
Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper.
Step 2
In a large bowl, toss the quartered potatoes with olive oil, oregano, garlic powder, lemon juice, salt, and pepper. Spread the potatoes in a single layer on one side of the prepared baking sheet.
Step 3
Roast the potatoes for 15 minutes. While potatoes are roasting, pat the fish fillets dry with paper towels. Season both sides of the fish with salt and pepper.
Step 4
After 15 minutes, remove the baking sheet from the oven. Gently push the potatoes to one side to make room for the fish. Place the seasoned fish fillets on the other side of the baking sheet. Drizzle the melted butter over the fish.
Step 5
Return to the oven and bake for another 10-15 minutes, or until the fish is opaque and flakes easily with a fork, and the potatoes are tender and slightly golden. Cooking time will vary based on the thickness of your fish.
Step 6
Remove from oven. Garnish with fresh parsley and serve immediately with extra lemon wedges.
Tips
- Adjust cooking time for fish based on its thickness; thinner fillets will cook faster.
- Don't overcrowd the pan, ensure there's space for everything to roast evenly.
- For extra flavor, add a pinch of red pepper flakes to the potatoes before roasting.
