  • 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1 red bell pepper, chopped into 1-inch pieces

  • 1 pint cherry tomatoes
  • 1/2 red onion, sliced

  • 2 cloves garlic, minced
  • 1 tbsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Juice of 1/2 lemon

  • Fresh parsley, chopped
  • Crumbled feta cheese
  • Cooked couscous or rice

Preparation

  1. Step 1

    Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper.

    In a large bowl, combine the chicken pieces, chopped bell peppers, zucchini, cherry tomatoes, and red onion.

    In a small bowl, whisk together the olive oil, minced garlic, oregano, basil, salt, pepper, and lemon juice. Pour this mixture over the chicken and vegetables. Toss well to ensure everything is evenly coated.
