- 1 lb fresh green beans, trimmed
- 1 tbsp olive oil

Preparation
Step 1
Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper or foil for easy cleanup.

In a small bowl, whisk together honey, minced garlic, soy sauce, apple cider vinegar, and grated ginger (if using) to make the honey-garlic glaze. Set aside about half of the glaze for brushing later.
Step 3
Pat the pork tenderloin medallions dry with paper towels. In a large bowl, combine the pork medallions and green beans. Drizzle with olive oil, a pinch of salt, and black pepper. Pour the remaining half of the honey-garlic glaze over the pork and green beans and toss to coat evenly.
Step 4
Spread the pork and green beans in a single layer on the prepared baking sheet, ensuring not to overcrowd it. If necessary, use two baking sheets.
Step 5
Roast for 15 minutes. Remove from oven, flip the pork and green beans, and brush the pork with a bit of the reserved glaze. Return to the oven and roast for another 8-10 minutes, or until the pork is cooked through (internal temperature of 145°F/63°C) and the green beans are tender-crisp.
Step 6
Remove from oven. For an extra glossy finish, you can brush the pork one last time with the remaining glaze. Let the pork rest for a few minutes before serving. Garnish with sesame seeds and fresh parsley or green onions if desired. Serve immediately.
