One-Pan Honey Garlic Pork Tenderloin with Green Beans

Say hello to your new favorite weeknight hero: One-Pan Honey Garlic Pork Tenderloin with Green Beans! This recipe is all about maximizing flavor while minimizing dishes. The pork comes out incredibly tender, the green beans perfectly crisp-tender, and that sticky, sweet-and-savory honey-garlic glaze? Absolutely irresistible.

Ingredients

Yield: 4 servings

For the Glaze

  • ¼ cup honey
  • 3 cloves garlic, minced
  • 2 tbsp soy sauce
  • 1 tbsp apple cider vinegar
  • 1 tsp grated fresh ginger (optional)

Main

  • 1 lb pork tenderloin, cut into 1-inch thick medallions
  • 1 lb fresh green beans, trimmed
  • 1 tbsp olive oil
  • Salt and black pepper to taste

Garnish (optional)

  • Sesame seeds
  • Chopped fresh parsley or green onions

Preparation

  1. Step 1

Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper or foil for easy cleanup.

  2. Step 2

In a small bowl, whisk together honey, minced garlic, soy sauce, apple cider vinegar, and grated ginger (if using) to make the honey-garlic glaze. Set aside about half of the glaze for brushing later.

  3. Step 3

Pat the pork tenderloin medallions dry with paper towels. In a large bowl, combine the pork medallions and green beans. Drizzle with olive oil, a pinch of salt, and black pepper. Pour the remaining half of the honey-garlic glaze over the pork and green beans and toss to coat evenly.

  4. Step 4

Spread the pork and green beans in a single layer on the prepared baking sheet, ensuring not to overcrowd it. If necessary, use two baking sheets.

  5. Step 5

Roast for 15 minutes. Remove from oven, flip the pork and green beans, and brush the pork with a bit of the reserved glaze. Return to the oven and roast for another 8-10 minutes, or until the pork is cooked through (internal temperature of 145°F/63°C) and the green beans are tender-crisp.

  6. Step 6

Remove from oven. For an extra glossy finish, you can brush the pork one last time with the remaining glaze. Let the pork rest for a few minutes before serving. Garnish with sesame seeds and fresh parsley or green onions if desired. Serve immediately.

Tips

  • Don’t overcrowd the pan! If your baking sheet is too full, use two. This ensures everything roasts nicely instead of steaming.
  • Pork tenderloin cooks quickly, so keep an eye on it to prevent overcooking and drying out.
