Ingredients
Yield: 4 servings
Main
- 1.5 lbs pork tenderloin, cut into 1-inch pieces
- 4 cups broccoli florets
- 1 tbsp olive oil
- Salt and black pepper to taste
- For the Honey Garlic Sauce:
- 1/4 cup honey
- 2 tbsp soy sauce (low sodium preferred)
- 2 cloves garlic, minced
- 1 tbsp rice vinegar
- 1/2 tsp ginger powder (or 1 tsp fresh grated ginger)
- Optional: Sesame seeds and chopped green onions for garnish
Preparation
Step 1
Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper.
Step 2
In a medium bowl, whisk together honey, soy sauce, minced garlic, rice vinegar, and ginger powder for the sauce. Set aside.
Step 3
On the prepared baking sheet, spread out the pork tenderloin pieces and broccoli florets. Drizzle with olive oil and season with salt and pepper. Toss gently to combine.
Step 4
Pour about two-thirds of the honey-garlic sauce over the pork and broccoli, tossing to coat everything evenly. Reserve the remaining sauce.
Step 5
Bake for 20-25 minutes, or until the pork is cooked through (internal temperature of 145°F/63°C) and the broccoli is tender-crisp, stirring halfway through.
Step 6
Remove from oven. Drizzle with the remaining honey-garlic sauce, tossing to coat. Garnish with sesame seeds and green onions if desired. Serve immediately, perhaps with a side of rice or quinoa.
Tips
- To ensure even cooking, cut your pork and broccoli into roughly similar-sized pieces.
- Don't overcrowd the pan! If your baking sheet is too full, use two to allow everything to roast nicely.
- If you like a bit of heat, add a pinch of red pepper flakes to the sauce.
