One-Pan Honey Garlic Pork and Broccoli

  • 1.5 lbs pork tenderloin, cut into 1-inch pieces
  • 4 cups broccoli florets
  • 1 tbsp olive oil
  • Salt and black pepper to taste
  • For the Honey Garlic Sauce:
  • 1/4 cup honey
  • 2 tbsp soy sauce (low sodium preferred)
  • 2 cloves garlic, minced
  • 1 tbsp rice vinegar
  • 1/2 tsp ginger powder (or 1 tsp fresh grated ginger)
  • Optional: Sesame seeds and chopped green onions for garnish

Preparation

  1. Step 1

    Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper.

    In a medium bowl, whisk together honey, soy sauce, minced garlic, rice vinegar, and ginger powder for the sauce. Set aside.

    On the prepared baking sheet, spread out the pork tenderloin pieces and broccoli florets. Drizzle with olive oil and season with salt and pepper. Toss gently to combine.

  4. Step 4

    Pour about two-thirds of the honey-garlic sauce over the pork and broccoli, tossing to coat everything evenly. Reserve the remaining sauce.

  5. Step 5

    Bake for 20-25 minutes, or until the pork is cooked through (internal temperature of 145°F/63°C) and the broccoli is tender-crisp, stirring halfway through.

  6. Step 6

    Remove from oven. Drizzle with the remaining honey-garlic sauce, tossing to coat. Garnish with sesame seeds and green onions if desired. Serve immediately, perhaps with a side of rice or quinoa.

Tips

  • To ensure even cooking, cut your pork and broccoli into roughly similar-sized pieces.
  • Don't overcrowd the pan! If your baking sheet is too full, use two to allow everything to roast nicely.
  • If you like a bit of heat, add a pinch of red pepper flakes to the sauce.
