- 1.5 lbs baby potatoes, quartered
- 1 tbsp olive oil
- 2 tsp garlic powder
- 1 tsp dried Italian seasoning
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup grated Parmesan cheese
- 2 tbsp fresh parsley, chopped (for garnish)
Preparation
Step 1
Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper.
Step 2
In a large bowl, toss the quartered potatoes with 1/2 tablespoon of olive oil, 1 teaspoon garlic powder, 1/2 teaspoon Italian seasoning, 1/4 teaspoon salt, and a pinch of black pepper. Spread the potatoes in a single layer on one half of the prepared baking sheet.
Step 3
Roast potatoes for 15 minutes.
Step 4
While potatoes roast, pat pork medallions dry with paper towels. In the same large bowl (no need to clean!), toss pork with the remaining 1/2 tablespoon olive oil, 1 teaspoon garlic powder, 1/2 teaspoon Italian seasoning, 1/4 teaspoon salt, and a pinch of black pepper. Stir in the grated Parmesan cheese, making sure the pork is well coated.
Step 5
After the potatoes have roasted for 15 minutes, remove the baking sheet from the oven. Push the potatoes to one side and arrange the seasoned pork medallions in a single layer on the other half of the baking sheet.
Step 6
Return the baking sheet to the oven and continue to roast for another 15-20 minutes, or until the pork is cooked through (internal temperature 145°F/63°C) and the potatoes are tender and golden brown. You can flip the pork and potatoes halfway through this second bake for more even browning.
