  • 1 tbsp chopped fresh rosemary
  • 1 tbsp chopped fresh thyme
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Optional: 1 cup chopped broccoli florets or green beans

Preparation

    Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper or foil for easy cleanup.

    In a large bowl, combine the chopped potatoes, olive oil, minced garlic, rosemary, thyme, paprika, salt, and pepper. Toss well to coat evenly.

    Return to the oven and roast for another 10-15 minutes, or until the pork reaches an internal temperature of 145°F (63°C) and the potatoes are tender and golden brown. Let the pork rest for 5-10 minutes before slicing.
