- 1 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 lb pork tenderloin, cut into 1-inch thick medallions
- 2 cloves garlic, minced
- 1 tbsp fresh parsley, chopped (for garnish)
Preparation
Step 1
Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper.

On the prepared baking sheet, toss the potato pieces with 1 tablespoon of olive oil, dried rosemary, dried thyme, garlic powder, salt, and pepper. Spread potatoes in a single layer.

Roast potatoes for 15 minutes.

While potatoes roast, pat pork medallions dry with paper towels. Season both sides with a pinch of salt and pepper. After the potatoes have roasted for 15 minutes, remove the baking sheet from the oven. Push the potatoes to one side of the pan. Add the pork medallions and minced garlic to the empty side of the pan.
Step 5
Return the baking sheet to the oven and continue to roast for another 15-20 minutes, or until the pork is cooked through (internal temperature 145°F/63°C) and the potatoes are tender and golden brown. If desired, you can briefly broil for 1-2 minutes at the end for extra crispiness.
Step 6
Remove from oven, let pork rest for a few minutes before serving. Garnish with fresh chopped parsley and serve warm.
