- 1 tbsp olive oil
- 1 lb broccoli florets
- 1 tbsp butter
- 3 cloves garlic, minced
- 1 lb raw shrimp, peeled and deveined (tails on or off)
- 1/4 tsp red pepper flakes (optional)
- Juice of 1/2 lemon
- 2 tbsp fresh parsley, chopped
- Salt and black pepper to taste
Preparation
Step 1
Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper.
Step 2
On the prepared baking sheet, toss the broccoli florets with olive oil, salt, and pepper. Spread them in a single layer. Roast for 10 minutes.
Step 3
While the broccoli roasts, prepare the shrimp. In a small bowl, combine the shrimp, minced garlic, red pepper flakes (if using), salt, and pepper. Toss to coat.
Step 4
After the broccoli has roasted for 10 minutes, remove the baking sheet from the oven. Push the broccoli to one side of the pan. Add the butter to the hot pan, letting it melt quickly from the residual heat. Add the seasoned shrimp to the other side of the pan.
Step 5
Return the baking sheet to the oven and roast for another 5-7 minutes, or until the shrimp are pink and cooked through, and the broccoli is tender-crisp. No need to flip the shrimp.
Step 6
Remove from oven. Squeeze fresh lemon juice over the shrimp and broccoli, and sprinkle with fresh chopped parsley. Serve immediately, perhaps with some rice or quinoa.
