  • 1 tbsp olive oil
  • 2 tbsp unsalted butter
  • 1 lb large shrimp, peeled and deveined
  • 4 cloves garlic, minced
  • 1 cup orzo pasta, uncooked
  • 3 cups chicken broth or vegetable broth
  • 1/2 cup white wine (optional, or use more broth)
  • 1/2 tsp dried oregano
  • Salt and freshly ground black pepper to taste
  • 1/4 cup fresh parsley, chopped
  • Lemon wedges, for serving

Preparation

  1. Step 1

    Heat olive oil and 1 tablespoon of butter in a large skillet or Dutch oven with a lid over medium-high heat. Add shrimp and cook for 1-2 minutes per side until pink and almost cooked through. Remove shrimp from skillet and set aside.

  2. Step 2

    Add remaining 1 tablespoon of butter to the skillet. Add minced garlic and cook for 30 seconds until fragrant (do not burn!).

  3. Step 3

    Stir in uncooked orzo, broth, white wine (if using), and dried oregano. Season with salt and pepper. Bring to a boil, then reduce heat to low, cover, and simmer for 10-12 minutes, or until most of the liquid has been absorbed and orzo is tender.

  4. Step 4

    Stir the cooked shrimp back into the orzo. Cook for another 2-3 minutes, stirring gently, until shrimp are fully heated through and orzo is creamy. If liquid is too thick, add a splash more broth or water.

  5. Step 5

    Stir in fresh parsley. Taste and adjust seasoning as needed. Serve immediately with fresh lemon wedges.

Tips

  • Don't overcook the shrimp in the first step; they'll finish cooking when added back to the orzo.
  • For a veggie boost, stir in a handful of baby spinach during the last minute of cooking.
  • If you don't have white wine, simply use extra broth for the same delicious results.
