One-Pan Garlic Butter Shrimp and Broccoli

Say hello to your new favorite weeknight savior! This One-Pan Garlic Butter Shrimp and Broccoli is ridiculously easy, bursting with flavor, and cleans up in a flash. Juicy shrimp and vibrant broccoli are coated in a heavenly garlic butter sauce and roasted to perfection. No fuss, just deliciousness!

Ingredients

Yield: 4 servings

Main

  • 1 lb large shrimp, peeled, deveined, and tails on or off
  • 4 cups broccoli florets (from 1 large head)
  • 4 tbsp unsalted butter, melted
  • 4 cloves garlic, minced
  • 1 tbsp fresh lemon juice
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Optional: red pepper flakes, for a kick
  • Fresh parsley, chopped, for garnish

Preparation

  1. Step 1

Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.

  2. Step 2

In a small bowl, whisk together the melted butter, minced garlic, lemon juice, salt, pepper, and red pepper flakes (if using).

  3. Step 3

On the prepared baking sheet, combine the shrimp and broccoli florets. Pour the garlic butter mixture over them and toss well to ensure everything is evenly coated.

  4. Step 4

Spread the shrimp and broccoli in a single layer on the baking sheet.

  5. Step 5

Bake for 12-15 minutes, or until shrimp are pink and opaque and broccoli is tender-crisp. Avoid overcooking the shrimp, as they can become rubbery.

  6. Step 6

Remove from oven, garnish with fresh chopped parsley, and serve immediately. Delicious on its own or with a side of rice or quinoa.

Tips

  • Don't crowd the baking sheet! If you have too many ingredients, use two sheets to ensure everything roasts evenly and gets crispy.
  • For a complete meal, add pre-cooked pasta (like orzo or spaghetti) to the pan during the last 5 minutes of cooking and toss everything together with a splash of pasta water.
  • You can prep your garlic butter mixture in advance and store it in the fridge until ready to use.
