  • 1 tbsp olive oil
  • 12 oz pre-cooked sausage (e.g., smoked sausage, kielbasa), sliced into 1/2-inch rounds
  • 1 bunch broccolini, trimmed
  • 2 tbsp unsalted butter
  • 3 cloves garlic, minced
  • 1/2 tsp red pepper flakes (optional, for heat)
  • Juice of half a lemon
  • Salt and fresh black pepper to taste
  • Fresh parsley, chopped, for garnish (optional)

Preparation

  1. Step 1

    Preheat a large skillet (cast iron or non-stick) over medium-high heat. Add olive oil.

    Add sliced sausage to the hot skillet and cook for 5-7 minutes, turning occasionally, until nicely browned and slightly crispy. Remove sausage from the skillet and set aside.

    Add the trimmed broccolini to the same skillet. Add 1-2 tablespoons of water (this helps steam the broccolini) and cover. Cook for 3-5 minutes, or until broccolini is bright green and tender-crisp. Remove cover and let any remaining water evaporate.

    Push broccolini to one side of the skillet. Add butter to the empty side and let it melt. Add minced garlic and red pepper flakes (if using) to the melted butter and cook for 30 seconds until fragrant.

    Return the cooked sausage to the skillet. Toss everything together, coating the sausage and broccolini in the garlic butter sauce.

  6. Step 6

    Squeeze fresh lemon juice over the dish. Season with salt and pepper to taste. Garnish with chopped fresh parsley, if using, and serve immediately.

  • If you don't have broccolini, regular broccoli florets or asparagus would also work well.
