  • 1.5 lbs small potatoes (such as baby Yukon Gold or red potatoes), quartered or halved
  • 1 tbsp olive oil
  • Salt and freshly ground black pepper to taste
  • 1.5 lbs boneless, skinless chicken thighs
  • 4 tbsp unsalted butter, melted
  • 4 cloves garlic, minced
  • Juice of 1 lemon (about 2-3 tbsp)
  • 1 tbsp fresh parsley, chopped, for garnish (optional)

Preparation

  1. Step 1

    Preheat oven to 400°F (200°C). Spray a large baking sheet with cooking spray or line with parchment paper.

    In a large bowl, toss the quartered potatoes with olive oil, salt, and pepper until evenly coated. Spread them in a single layer on one half of the prepared baking sheet.

    Roast potatoes for 15 minutes to give them a head start.

  4. Step 4

    While potatoes are roasting, season chicken thighs with salt and pepper. In a small bowl, whisk together melted butter, minced garlic, and lemon juice.

  5. Step 5

    After 15 minutes, remove the baking sheet from the oven. Arrange chicken thighs on the other half of the baking sheet. Pour about half of the garlic butter lemon mixture over the chicken and the remaining half over the potatoes, tossing the potatoes slightly to redistribute.

  6. Step 6

    Return the baking sheet to the oven and continue roasting for another 20-25 minutes, or until chicken is cooked through (internal temperature reaches 165°F / 74°C) and potatoes are tender and golden brown. If desired, broil for the last 2-3 minutes for extra crispiness.

  7. Step 7

    Garnish with fresh parsley and serve immediately.

  • For a spicier kick, add a pinch of red pepper flakes to the garlic butter mixture.
  • If you prefer chicken breasts, reduce cooking time slightly and ensure they are pounded to an even thickness.
