  • 1.5 lbs boneless, skinless chicken thighs or breasts, cut into 1-inch pieces
  • 1 large head of broccoli, cut into florets
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp dried oregano (or other dried herb like Italian seasoning)
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Red pepper flakes (optional, for a kick)
  • Lemon wedges, for serving

Preparation

  1. Step 1

    Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.

    In a large bowl, combine the chicken pieces and broccoli florets. Add minced garlic, olive oil, lemon juice, oregano, salt, pepper, and red pepper flakes (if using). Toss everything together until the chicken and broccoli are well coated.

    Spread the chicken and broccoli mixture in a single layer on the prepared baking sheet. Ensure there's a little space between pieces so they roast rather than steam.

    Roast for 20-25 minutes, or until the chicken is cooked through (internal temperature 165°F/74°C) and the broccoli is tender-crisp with slightly charred edges. If you prefer crispier broccoli, you can toss it halfway through cooking.
