- 1.5 lbs boneless, skinless chicken thighs (or breasts), cut into 1-inch pieces
- 1.5 lbs broccolini, trimmed
- 3 tbsp olive oil, divided
- 1 tbsp lemon juice
- 2 cloves garlic, minced
- 1 tsp dried Italian seasoning
- 1/2 tsp onion powder
- 1/4 tsp red pepper flakes (optional)
- Salt and black pepper to taste
- Lemon wedges, for serving
Preparation
Step 1
Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
Step 2
In a large bowl, combine the chicken pieces with 1.5 tbsp olive oil, lemon juice, minced garlic, Italian seasoning, onion powder, red pepper flakes (if using), salt, and pepper. Toss well to coat the chicken evenly.

In the same bowl (no need to clean!), add the trimmed broccolini. Drizzle with the remaining 1.5 tbsp olive oil, and season with a pinch of salt and pepper. Toss until the broccolini is lightly coated.
Step 4
Spread the seasoned chicken and broccolini in a single layer on the prepared baking sheet. Ensure there's space between pieces for even cooking, using two sheets if necessary.
Step 5
Roast for 20-25 minutes, or until the chicken is cooked through (internal temperature reaches 165°F/74°C) and the broccolini is tender-crisp with slightly charred edges. If using chicken breasts, cooking time might be slightly shorter.
Step 6
Serve immediately with lemon wedges for squeezing over. This dish is fantastic on its own or alongside quinoa or rice.

- Feel free to swap broccolini for regular broccoli florets – just ensure they're cut into similar sizes.
