  • 2 large heads broccoli, cut into bite-sized florets
  • 1 tbsp olive oil
  • 1 tbsp white miso paste
  • 1 tbsp warm water
  • 1 tbsp rice vinegar
  • 1 tsp honey or maple syrup
  • 1/2 tsp grated fresh ginger (optional)
  • 1 clove garlic, minced (optional)
  • 1 tbsp sesame seeds, toasted, for garnish

Preparation

  1. Step 1

    Preheat oven to 400°F (200°C). Line a large sheet pan with parchment paper.

  2. Step 2

    In a large bowl, toss the broccoli florets with olive oil until lightly coated. Spread them in a single layer on the prepared sheet pan. Roast for 15-20 minutes, or until tender-crisp and slightly charred.

    While the broccoli roasts, prepare the miso glaze: In a small bowl, whisk together the white miso paste and warm water until smooth. Stir in the rice vinegar, honey (or maple syrup), grated ginger (if using), and minced garlic (if using).

    Once the broccoli is roasted, remove the sheet pan from the oven. Drizzle the miso glaze evenly over the broccoli and toss gently to coat.

    Return the sheet pan to the oven and roast for another 3-5 minutes, just until the glaze is slightly caramelized and sticky. Keep a close eye on it to prevent burning.

    Transfer the broccoli to a serving dish, sprinkle generously with toasted sesame seeds, and serve hot.

Tips

  • Don't worry if the miso paste seems thick; stirring it with warm water helps it dissolve and makes a smooth glaze.
  • Feel free to adjust the sweetness! Add a little more honey if you prefer a sweeter glaze.
