For the Chicken

  • 1 lb boneless, skinless chicken breasts, thinly sliced or cut into strips
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp dried oregano
  • 1/2 tsp garlic powder
  • Salt and black pepper to taste

For the Tzatziki Sauce

  • 1/2 cup plain Greek yogurt
  • 1/4 cup finely grated cucumber (squeezed dry)
  • 1 tbsp lemon juice
  • 1 clove garlic, minced
  • 1 tbsp fresh dill, chopped (or 1 tsp dried)
  • Salt and black pepper to taste

For Assembly

  • 4-6 large whole wheat tortillas or pita breads
  • 1/2 cup chopped romaine lettuce
  • 1/2 cup diced cucumber
  • 1/2 cup chopped tomatoes
  • 1/4 cup crumbled feta cheese (optional)
  • 1/4 cup sliced red onion (optional)

Preparation

  1. Step 1

    In a bowl, combine chicken with olive oil, 1 tbsp lemon juice, oregano, garlic powder, salt, and pepper. Let marinate for at least 10 minutes, or up to 30 minutes in the fridge.

    While chicken marinates, prepare the Tzatziki sauce: In a small bowl, whisk together Greek yogurt, grated cucumber, 1 tbsp lemon juice, minced garlic, and fresh dill. Season with salt and pepper to taste. Set aside.

  3. Step 3

    Heat a large skillet or grill pan over medium-high heat. Cook the chicken strips for 3-5 minutes per side, or until cooked through and lightly browned. Remove from heat.

  4. Step 4

    Warm the tortillas according to package directions (microwave for 15-20 seconds or briefly heat in a dry skillet).

  5. Step 5

    To assemble, spread a generous amount of Tzatziki sauce on each tortilla. Layer with cooked chicken, romaine lettuce, diced cucumber, chopped tomatoes, red onion (if using), and feta cheese (if using). Roll up tightly and serve immediately.
