Mediterranean Chicken Skillet with Olives and Feta

Bring the sunny flavors of the Mediterranean to your dinner table tonight with this incredibly easy and delicious chicken skillet! Tender chicken thighs are cooked alongside bright sun-dried tomatoes, salty olives, and fresh herbs, then topped with crumbled feta for a creamy, tangy finish. It’s a one-pan wonder that’s big on flavor and light on cleanup!

  • 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • ½ tsp garlic powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 small red onion, thinly sliced
  • 1 pint cherry tomatoes, halved
  • ½ cup Kalamata olives, pitted and halved
  • ¼ cup sun-dried tomatoes (oil-packed, drained and chopped)
  • ½ cup chicken broth
  • 4 oz feta cheese, crumbled
  • 2 tbsp fresh parsley, chopped, for garnish

Preparation

  1. Step 1

    Pat chicken pieces dry with paper towels. In a medium bowl, toss chicken with 1 tablespoon olive oil, oregano, garlic powder, salt, and pepper until evenly coated.

    Heat the remaining 1 tablespoon olive oil in a large skillet (preferably oven-safe if you want to finish it under the broiler) over medium-high heat. Add chicken and cook for 5-7 minutes, stirring occasionally, until browned on all sides. It doesn't need to be cooked through at this stage.

  3. Step 3

    Add sliced red onion, halved cherry tomatoes, Kalamata olives, and chopped sun-dried tomatoes to the skillet. Cook for 5-7 minutes, stirring occasionally, until vegetables begin to soften.

  4. Step 4

    Pour in the chicken broth and bring to a simmer. Reduce heat to medium-low, cover the skillet, and let it gently simmer for 8-10 minutes, or until the chicken is cooked through and the sauce has slightly thickened.

  5. Step 5

    Remove from heat. Stir gently to combine everything. Sprinkle the crumbled feta cheese evenly over the top of the skillet.

  6. Step 6

    If desired, you can place the skillet under a broiler for 2-3 minutes to warm the feta and get a little browning, watching carefully to prevent burning. (Skip this step if your skillet isn't oven-safe).

  7. Step 7

    Garnish with fresh chopped parsley and serve warm, perhaps with couscous or crusty bread for soaking up the delicious sauce.

Tips

  • Use boneless, skinless chicken breasts if you prefer, but reduce cooking time slightly to prevent them from drying out.
  • Add a handful of fresh spinach during the last 2-3 minutes of simmering for extra greens.
  • Taste the sauce before adding salt, as olives and feta can be quite salty.
