  • 1.5 lbs pork tenderloin, trimmed and cut into 1-inch thick medallions
  • 1 lb baby potatoes, halved or quartered
  • 1 head broccoli, cut into florets
  • 1 tablespoon olive oil
  • Salt and black pepper to taste

For the Maple-Dijon Sauce

  • 1/4 cup maple syrup
  • 2 tablespoons Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1 clove garlic, minced
  • 1/2 teaspoon dried thyme

Preparation

  1. Step 1

    Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.

  2. Step 2

    In a medium bowl, whisk together all ingredients for the Maple-Dijon Sauce: maple syrup, Dijon mustard, apple cider vinegar, minced garlic, and dried thyme. Set aside.

    On the prepared baking sheet, toss the potatoes and broccoli with olive oil, salt, and pepper. Spread them in a single layer.

  4. Step 4

    Place the pork tenderloin medallions among the vegetables. Brush about half of the maple-Dijon sauce over the pork and vegetables.

  5. Step 5

    Bake for 15 minutes. Remove the baking sheet from the oven, flip the pork and vegetables, and brush with the remaining maple-Dijon sauce. Return to the oven and bake for another 15-20 minutes, or until the pork is cooked through (internal temperature 145°F/63°C) and the vegetables are tender and lightly caramelized.

    Let the pork rest for 5 minutes before serving. Serve immediately, enjoying the delicious pan juices.
