  • 1 tbsp olive oil
  • ½ tsp salt
  • ½ lb cooked chicken (shredded or diced, e.g., rotisserie chicken)
  • ¼ cup buffalo sauce (plus more for drizzling)
  • 2 oz cream cheese, softened
  • ¼ cup plain Greek yogurt or sour cream
  • ¼ cup shredded cheddar cheese, plus more for topping
  • 2 tbsp chopped fresh chives or green onions
  • Optional toppings: blue cheese crumbles, extra ranch/blue cheese dressing, celery sticks

Preparation

  1. Step 1

    Preheat oven to 400°F (200°C). Scrub potatoes clean and pat dry. Pierce each potato several times with a fork. Rub with olive oil and sprinkle with salt. Place directly on the oven rack and bake for 45-60 minutes, or until very tender when squeezed.

    While potatoes bake, prepare the buffalo chicken filling: In a medium bowl, combine the shredded cooked chicken with buffalo sauce, softened cream cheese, Greek yogurt (or sour cream), and ¼ cup shredded cheddar cheese. Stir until well combined and creamy.

  3. Step 3

    Once potatoes are cooked, carefully remove them from the oven. Using a knife, slice each potato lengthwise down the middle, being careful not to cut all the way through the bottom. Fluff the inside of the potato with a fork.

  4. Step 4

    Generously spoon the buffalo chicken filling into each potato. Top with additional shredded cheddar cheese.

    Return potatoes to the oven and bake for another 10-15 minutes, or until the cheese is melted and bubbly and the filling is heated through.

    Remove from oven. Garnish with chopped chives or green onions. Drizzle with extra buffalo sauce or ranch/blue cheese dressing, and add blue cheese crumbles if desired. Serve hot.
