- 1 tbsp olive oil
- 3 cloves garlic, minced
- 1 cup orzo pasta
- 2 cups chicken or vegetable broth
- 1/2 cup water
- 1/2 cup grated Parmesan cheese, plus more for serving
- 5 oz fresh baby spinach
- Juice of 1/2 lemon (about 1.5 tbsp)
- Zest of 1/2 lemon
- Salt and black pepper to taste
- Pinch of red pepper flakes (optional)
Preparation
Step 1
Heat olive oil in a medium saucepan or Dutch oven over medium heat. Add minced garlic and cook for 1 minute until fragrant (do not brown).

Add the orzo to the saucepan and toast lightly for 1-2 minutes, stirring constantly, until slightly golden.

Pour in the chicken or vegetable broth and water. Bring to a simmer, then reduce heat to low, cover, and cook for 10-12 minutes, or until the orzo is tender and most of the liquid has been absorbed. Stir occasionally to prevent sticking.
Step 4
Remove from heat. Stir in the grated Parmesan cheese, fresh baby spinach, lemon juice, lemon zest, salt, pepper, and optional red pepper flakes. Stir until the spinach has wilted and the cheese is melted and creamy.
Step 5
Serve immediately, garnished with extra Parmesan cheese and fresh parsley if desired. Best enjoyed fresh!
