- 4 (6 oz) salmon fillets
- 1 lb baby potatoes, quartered
- 1 head broccoli, cut into florets
- 1 bell pepper (any color), sliced
- 2 tbsp olive oil
- 1 lemon, thinly sliced, plus 1 tbsp juice
- 2 tbsp fresh dill, chopped, plus more for garnish
- 1/2 tsp garlic powder
- Salt and freshly ground black pepper to taste
Preparation
Step 1
Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
Step 2
In a large bowl, combine quartered baby potatoes, broccoli florets, and sliced bell pepper. Drizzle with 1 tablespoon of olive oil, season with salt, pepper, and garlic powder. Toss to coat evenly.
Step 3
Spread the vegetables in a single layer on one half of the prepared baking sheet. Roast for 10 minutes.
Step 4
While vegetables are roasting, pat salmon fillets dry with paper towels. In a small bowl, whisk together the remaining 1 tablespoon of olive oil, lemon juice, and chopped fresh dill. Season salmon with salt and pepper.
Step 5
After 10 minutes, remove the baking sheet from the oven. Push the vegetables to the side to make room for the salmon. Place salmon fillets on the empty half of the baking sheet. Spoon or brush the lemon-dill mixture over the salmon. Top each fillet with a thin lemon slice.
Step 6
Return to the oven and bake for another 10-15 minutes, or until the salmon is cooked through and flakes easily with a fork, and the vegetables are tender. Cooking time will vary based on salmon thickness.

Serve immediately, garnished with extra fresh dill if desired.

- For a little extra zest, finely grate some lemon zest over the finished dish.
