- 1/4 cup water
For the Stir-Fry
- 1 tbsp vegetable oil
- 1 lb boneless, skinless chicken breast or thighs, cut into 1-inch pieces
- 1 head broccoli, cut into florets
- 1 red bell pepper, thinly sliced
- 1 carrot, thinly sliced or julienned
- 1/2 cup snap peas
- Cooked rice or noodles, for serving
- Sesame seeds, for garnish (optional)
- Green onions, sliced, for garnish (optional)
Preparation
Step 1
In a small bowl, whisk together all sauce ingredients (soy sauce, honey, rice vinegar, ginger, garlic, cornstarch, and water) until smooth. Set aside.
Step 2
Heat vegetable oil in a large skillet or wok over medium-high heat. Add chicken and cook, stirring occasionally, until browned and cooked through, about 5-7 minutes. Transfer chicken to a clean plate.
Step 3
Add broccoli, red bell pepper, and carrot to the same skillet. Stir-fry for 3-5 minutes, until vegetables are crisp-tender. Add snap peas and stir-fry for 1-2 more minutes.
Step 4
Return cooked chicken to the skillet with the vegetables. Give the sauce mixture another quick whisk, then pour it over the chicken and vegetables. Cook, stirring constantly, until the sauce thickens and coats everything, about 1-2 minutes.
Step 5
Serve immediately over cooked rice or noodles, garnished with sesame seeds and green onions, if desired.
