For the Sauce
- 1/4 cup soy sauce (low sodium preferred)
- 2 tbsp honey
- 1 tbsp rice vinegar
- 2 cloves garlic, minced
- 1 tsp grated fresh ginger
- 1 tsp cornstarch
- 2 tbsp water
For the Stir-Fry
- 1 lb large shrimp, peeled and deveined (tails on or off)
- 1 tbsp olive oil or sesame oil
- 1 large head of broccoli, cut into small florets
- 1 red bell pepper, thinly sliced
- 1 cup sliced carrots (or 1/2 cup shredded carrots)
- Cooked rice or noodles, for serving
- Sesame seeds and sliced green onions, for garnish (optional)
Preparation
Step 1
Prepare the sauce: In a small bowl, whisk together soy sauce, honey, rice vinegar, minced garlic, and grated ginger. In a separate tiny bowl, whisk cornstarch and water until smooth to create a slurry. Add the slurry to the sauce mixture and whisk until combined. Set aside.
Step 2
Heat olive oil (or sesame oil) in a large skillet or wok over medium-high heat. Add broccoli florets and cook for 3-4 minutes, stirring frequently, until bright green and slightly tender-crisp. Add a splash of water if needed to help steam them.
Step 3
Add sliced red bell pepper and carrots to the skillet. Continue to stir-fry for another 2-3 minutes until vegetables are tender-crisp.
Step 4
Push vegetables to one side of the skillet. Add the shrimp to the empty side and cook for 1-2 minutes per side until they turn pink and opaque. Don't overcrowd the pan; cook in batches if necessary.
Step 5
Give the prepared sauce a quick whisk (it may separate). Pour the sauce over the shrimp and vegetables. Stir everything together until the sauce thickens and coats all ingredients, about 1-2 minutes. The sauce will become glossy.
Step 6
Remove from heat. Serve immediately over cooked rice or noodles, garnished with sesame seeds and sliced green onions if desired.
