For the Stir-Fry

  • 1 tbsp sesame oil
  • 1 lb boneless, skinless chicken breast or thighs, cut into 1-inch pieces
  • 1 head broccoli, cut into florets
  • 1 red bell pepper, thinly sliced
  • 1 cup snap peas
  • 2 cloves garlic, minced
  • 1 tbsp grated fresh ginger

For the Sauce

  • 3 tbsp gochujang (Korean chili paste)
  • 2 tbsp honey
  • 2 tbsp soy sauce (or tamari for gluten-free)
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 1 tbsp cornstarch
  • 1/4 cup water or chicken broth

For Serving

  • Cooked rice or noodles
  • Toasted sesame seeds
  • Sliced green onions

Preparation

  1. Step 1

    In a small bowl, whisk together all sauce ingredients (gochujang, honey, soy sauce, rice vinegar, sesame oil, cornstarch, and water/broth) until smooth. Set aside.

  2. Step 2

    Heat 1 tablespoon sesame oil in a large skillet or wok over medium-high heat. Add the chicken pieces and cook, stirring occasionally, until browned and cooked through, about 5-7 minutes. Remove chicken from the skillet and set aside.

  3. Step 3

    Add the broccoli florets and red bell pepper to the skillet. Stir-fry for 3-4 minutes until slightly tender-crisp. Add the snap peas, minced garlic, and grated ginger and stir-fry for another 1-2 minutes until fragrant.

  4. Step 4

    Return the cooked chicken to the skillet with the vegetables. Give the sauce another quick whisk, then pour it over the chicken and vegetables. Cook, stirring constantly, until the sauce thickens and coats everything evenly, about 1-2 minutes.

  5. Step 5

    Serve immediately over cooked rice or noodles, garnished with toasted sesame seeds and sliced green onions.
