- 1 tbsp soy sauce

- 2 tbsp soy sauce
- 1 tbsp rice vinegar
- 2 cloves garlic, minced
- 1/2 tsp grated fresh ginger
For the Stir-Fry
- 1 tbsp vegetable oil
- 4 cups mixed stir-fry vegetables (e.g., broccoli florets, bell peppers, snap peas, carrots)
- Sesame seeds and chopped green onions, for garnish
- Cooked rice, for serving
Preparation
Step 1
In a medium bowl, toss the chicken pieces with cornstarch and 1 tbsp soy sauce. Set aside.
Step 2
In a small bowl, whisk together the honey, 2 tbsp soy sauce, rice vinegar, minced garlic, and grated ginger for the sauce. Set aside.
Step 3
Heat vegetable oil in a large skillet or wok over medium-high heat. Add the chicken and cook for 5-7 minutes, stirring occasionally, until browned and cooked through. Remove chicken from the pan and set aside.
Step 4
Add the mixed vegetables to the same skillet. Stir-fry for 5-7 minutes until crisp-tender. You want them to still have a little bite!
Step 5
Return the cooked chicken to the skillet with the vegetables. Pour the sauce over everything. Stir well and cook for 1-2 minutes, allowing the sauce to thicken and coat the chicken and veggies.
Step 6
Serve immediately over cooked rice, garnished with sesame seeds and chopped green onions.
