Ingredients

Yield: 4 servings

Main

  • 1 tablespoon olive oil
  • 1 lb Italian sausage, casings removed
  • 1 small yellow onion, chopped
  • 2 cloves garlic, minced
  • 1 (14.5-ounce) can diced tomatoes, undrained
  • 1 (15-ounce) can tomato sauce
  • 1/2 cup chicken or vegetable broth
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 (17.5-ounce) package potato gnocchi
  • 1/4 cup grated Parmesan cheese
  • 2 cups fresh spinach
  • Fresh basil or parsley, chopped, for garnish

Preparation

  1. Step 1

Heat olive oil in a large oven-safe skillet or Dutch oven over medium-high heat. Add the Italian sausage and cook, breaking it up with a spoon, until browned and cooked through. Drain any excess fat.

  2. Step 2

Add the chopped onion to the skillet and cook for 3-5 minutes until softened. Stir in the minced garlic and cook for another minute until fragrant.

  3. Step 3

Stir in the diced tomatoes (with their liquid), tomato sauce, chicken broth, Italian seasoning, and red pepper flakes (if using). Bring the sauce to a gentle simmer.

  4. Step 4

Add the uncooked gnocchi to the simmering sauce, stirring gently to combine. Reduce heat to medium-low, cover, and cook for 8-10 minutes, stirring occasionally, until gnocchi are tender.

  5. Step 5

Stir in the Parmesan cheese and fresh spinach until the spinach wilts. Taste and adjust seasoning as needed. Garnish with fresh basil or parsley and serve hot.

Tips

  • For a creamier sauce, stir in a splash of heavy cream or half-and-half at the end.
  • Add other vegetables like bell peppers or zucchini for extra nutrition.
